Recipe of the Month: Peppermint Bark

Well, Christmas is upon us! This is a week full of get togethers, family parties, exchanging presents, and let’s not forget, lots of food.

This month’s recipe is for peppermint bark. It literally takes less than 25 minutes and it is sure to impress your entire family.

Ingredients:

12 oz. dark chocolate chips

12 oz. white chocolate chips

2 tbsp peppermint extract

8 candy canes

*Note: The difference in chocolate chips makes a big difference in the taste. Use good quality chocolate chips for the best results!

Directions:

Crush unwrapped candy canes in a bag. Place to the side. Melt dark chocolate chips in a double boiler. Spread on a cookie sheet and place in the freezer for 10 minutes to harden. While dark chocolate is in the freezer, melt the white chocolate the same way and stir the peppermint extract into the melted chocolate. Immediately spread melted white chocolate on top of the dark chocolate completely covering all the dark chocolate. Sprinkle crushed candy canes over the top and place in the freezer for 10 minutes to harden. Take bark out of the freezer, break into pieces, and enjoy!

One batch of this recipe makes quite a lot of bark. I made some last weekend and this was my finished plate!
